Delicious, low calorie and easy to make cookies.

Ingredients:

- 8.8 oz oatmeal
- 5.2 oz sugar
- 1 egg
- 3.5 oz butter or margarine
- 1.5 tbsp. cream
- 2 tsp. ground coffee
- grated zest from 1 lemon

How to:

1. Blend (grind) the oatmeal and sugar, add butter, cream, egg, coffee and zest. Mix all well and put the mixture to the fridge for 30 minutes.
2. Form cookies, lay them on a baking sheet and bake for 10-15 minutes at 360 degrees. Done! Delicious cookies are ready.

Farmer cheese (quark) and banana scones


















A very quick, easy and low calorie dessert.

Ingredients:

- 7-7.5 oz farmer cheese (quark)
- 1 banana

How to:

1. Blend
the quark and banana.
2. Line a baking sheet with parchment paper and lay the scones with spoon on it. Bake for 10-15 minutes at 350-360 degrees.

Farmer cheese (quark) cookies

















Ingredietns: 

- 14 oz farmer cheese (quark)
- 7 oz butter or margarine
- 2 cups flour
- 1 cup sugar
- 1/2 tsp. baking soda
- 1/3 tsp. salt

How to:

1. Blend well the butter and quark, add salt and 1/2 cup sugar, quickly blend again. 

2. Mix the blended mass with the flour and baking soda. Kneat a dough. Roll it out and cut out circles using a glass.

3. Now, dip every circle in sugar and fold each circle in half with the sugar side inwards. Dip the semi-circle again in sugar with one side and fold it one more time with the sugar side inside. 

4. Dip the cookie in sugar one more time and put it on a baking sheet with the sugar side upwards. Bake at 360 for 20 or so until golden.


Fish (salmon) pie with feta and spinach
















Ingredients:

for the dough:

-        9 oz flour
- 4.5 oz butter (from the freezer)
-2 eggs
- pinch of salt
- 3-6 tbsp. ice cold water

For the filling:
- 1.3 lbs fish (salmon)
- 9 oz feta cheese
- 14 oz frozen spinach
- 3-4 tbsp. cream
- salt to taste

How to:
1. First
preheat the oven to 390 degrees.
2.
Grate the butter. The quicker you make the dough the better.
3.
Mix the flour and salt and add to the butter. Make a hole and beat one egg. Add a couple of tbsp. ice cold water and kneat the dought. You may want to add some more ice cold water.
4. Wrap the dough in fodd plastic and put to the fridge for 30 minutes. But if you are in a rush, you can just as well roll out the gough immediately. It
s just that it tastes better frozen. You should take out the dough when the filling is ready.
5. Meanwhile let’s make the filling. Cut the fish into medium slices, also cut the feta cheese. Add the unfrozen spinach and cream and mix all well.


     6. Divide the dough into 2 parts: 2/3 and 1/3. Put the smaller one       
     back into the fridge. Roll out the bigger one and lay into a round  
     baking form. Cover with parchment paper, put a couple of handfulls 
     of dried peas and up into the oven. Bake for 15 minutes, then take 
     off the peas and bake for another 10 minutes.
     7. Roll out the smaller dough ball. Put the filling into the form   
     with the prebaked bottom of our pie 

     
     and cover with the second roled out dough part. Pinch the edges. Gently pierce the pie lid in 
     several places for better baking. 

Bake at 360 degrees for 1h. 20 
     minutes. Smear with beaten up egg some 10 minutes before the end.


Salad "White night"

















Ingredients:
- 7 vinegar pickled mushrooms 
- 2 onions (sauted) 
- 2 potatoes (boiled) 
- 1 carrot 
- 10.5 oz any cooked meat 
- 7.5 oz grated cheese
- mayo

How to:

1. Finely chop the mushroomsa and lay them in a salad dish. Chop the onion and saute it. Take
out and let cool. 
2. Lay the onion on top of the mushroom layer in the salad dish.
3. Now comes a thin layer of mayo. Next, grate the potatoes, spread them on top and also smear some mayo.
4. Now grate the raw carrot – it’s the next layer, next –again comes the mayo.
5. Chop the meat and put it as the next layer, then mayo. Finally comes a layer of grated cheese. Decorate with chopped fresh parsley or dill. Let it stand for some 30 minutes. The delicious salad is ready to serve!

Warm salad "Killing me softly"

Ingredients:

- 7 oz. crab sticks
- 10 oz button mushrooms
- 2 onions
- 2 boiled carrots
- bundle of dill
- olive oil
- oil for frying
- salt and pepper

How to:

1. Slice the onion in semi-circles and fry until golden.
2. Chop the mushrooms and fry until golden.
3. Chop the crab sticks in stripes and fry.
4. Combine all the ingredients plus grated or chopped boiled carrots. Add finely chopped fresh dill and sprinkle with olive oil. Enjoy this incredibly delicious salad.

Jug cooked potatoes with hunter's sausages

Ingredients:

- potatoes
- hunter’s sausages
- carrots
- onion
- salt, pepper, clove
- garlic
- some tomato sauce and water
- grated cheese
- fresh dill and parsley

How to:

1. Peel the potatoes and cut into cubes. Slice the hunter’s sausages. Set aside for a while.
2. Slice the carrots and stir fry them together with the tomato sauce and a couple of tbsp. water for some 10 minutes.
3. Add to the potatoes. Chopp the onion and garlic, add salt, pepper and clove. Mix all the ingredients and put in [clay] jugs. Bake for 45 minutes. Take out and put some grated cheese and fresh chopped dill or parsley on top. Yummilicious!

Fish fillet in potato tempura















Ingredients:

- 21 oz fish fillet
- 3 potatoes
- 1 egg
- 1/2 lemon
- 2 tbsp. flour

How to:

1. Cut the fish fillet into pieces, rub with salt, pepper and sprinkle with lemon juice.
2. Peel and grate the potatoes, mix with the egg and flour, stir well. Dip thoroughly the fish in the batter.
3. Fry shortly on both sides untill golden, then turn the heat down, cover with a lid and cook for about 20-30 minutes.

Fried puffy dumplings




















This is a very fast to make and delicious dish.

Ingredients: 

- 2 eggs 
- 3-4 tbsp. sugar
- pinch of salt
- vanilla
- 1/2 tsp. baking soda 
- 2-3 drops of lemon juice
- 3 tbsp. yoghurt
- 1 tbsp. vodka (optional)
- flour (enough to make a dough that wouldn’t stick to your hands)

How to:

1.Beat up the eggs with sugar, add salt, vanilla, baking soda mixed with 2-3 drops of lemon juice, yoghurt and vodka (if using). Stir well and add flour kneating a soft and non-sticking dough.
2. Roll out 0.3 inch thick and cut out with cookie forms.

3. Fry on both sides in heated oil. 

The dumplings puff up when they cook which takes seconds. 

Sprinkle with powdered sugar.

Potato patties with cheese and dill


















Ingredients:

- 1.5 cup mashed potatoes
- 1.5 cup grated cheese
- 1 egg
- flour (by eye, the quantity should allow to take the dough with wet hands and form patties)
- 3 tbsp. cream
- 1 tsp. baking powder
- salt and pepper
- a handful of chopped fresh dill
- other spices to your taste (you can also add some minced garlic)

How to:
Mix well all the ingredients, form patties with wet hands and fry in oil on both sides until golden brown. Serve warm.

Delicious Raffaello cake

















This tender and delicious cake reminds of Raffaello candies.

Ingredients:

For the spunge cake:
- 3 eggs
- 4 tbsp. water
- 3/4 cup sugar
- 5 tbsp. flour
- 5 tbsp. starch
- 3 tsp. Baking powder
- 1 oz coconut flakes

Frosting:
- 10.5 oz cream cheese or Mascarpone
- 3/4 can sweetened condensed milk (this thick and sweet stuff, don’t confuse it with unsweetened condensed milk which is much more liquid and will not do for the frosting)
- 4 oz almonds

decoration:
- coconut flakes, whole almonds

How to:

1. Beat up the eggs with water. Gradually stir in the rest of the ingredients for the sponge cake. Cover a baking form with parchment paper and pour the batter. Bake at 360 degrees 40 minutes. Let cool and cut the sponge cake lengthwise into 2 layers.
2. Roast a bit the almonds and coarsely chop them.
3. Whip the cream cheese or Mascarpone with the codensed milk.
4. Assemble the cake: smear the frosting over the first layer and distribute the roasted and chopped almonds. Cover with the second layer, smear the rest of the frosting on top and sprinkle with the coconut flakes. Decorate with whole almonds. Let the cake stand for several hour or overnight in the fridge or some cool place. You will enjoy every bit of it, guaranteed!

Pork baked under "fur"

















Ingredients:

- 2 lbs. pork (you can replace it with chicken fillet)
- 2-3 tomatoes
- 3 onions
- 3-4 potatoes
- 4-5 garlic cloves
- 7.5 oz grated cheese
- fresh dill and parsley
- salt, pepper
- mayo

How to:

1. Cut the meat into pieces, rub each piece with salt and pepper.
2. Grate the potatoes.
3. Cut the onions in rings.
4. Cut the tomatoes in semi-circles and dip each slice in mayo.
5. Grate the cheese.
6. Crush and mince the garlic.
7. Chop the herbs.

Assembling the layers:

1. Grease a baking sheet.
2. Put the meat pieces, then the onions, next the grated potatoes, then the tomato slices mixed with mayo.
3. Put the form into the oven and bake for 40-50 minutes at 400-428 degrees.
4. 5 minutes before the end sprinkle the dish with minced garlic, grated cheese and green herbs. Put it back to the oven and bake for another 5 minutes until the cheese melts. Your delicious dish is ready to serve!

Fish casserole with potatoes and spinach
























Ingredients:

- 1.5 lbs fish fillet
- 10 potatoes
- 1 pack (1 lb) frozen spinach
- 1 cup cream
- 1/2 cup milk
- 1 onion
- 2 eggs
- 1.7 oz grated cheese
- 2 tbsp. butter
- nutmeg (pinch)
- salt and pepper

How to:

1. Peel the potatoes and cook them in salted water. Mash the potatoes, add 1 tbsp. butter, 1/2 cup hot milk, mix.
2. Cut the fish in small pieces, add nutmeg, salt and pepper.
3. Chop the onion and saute for 5 minutes.
4. Add the spinach (unfrozen, squeezed from excessive liquid and chopped) to the onions and saute for another 7-8 минут. Lay the fish pieces to a greased baking form, the next layer – spinach and onion. Beat up 2 eggs and mix them with 1/2 cup cream. Pour into the baking form over the spinach and onion layer.
4. Next distribute evenly the mashed potatoes. 


Preheat the oven to 390 degrees and bake the casserole for 20 minutes.
5. Mix the grated cheese with 1/2 cup cream. Take out the casserole, pour over the cream and cheese sauce and bake for another 5 minutes until golden crust. Garnish with fresh dill or parsley.


Buckwheat and meat burgers in tomato sauce



















Ingredients:

- 1,5 cup buckwheat 
- 1 lb ground meat 
- 1 onion 
- 1 egg 
- 1 tbsp. mayo 
- 1 tbsp. oil 
- salt and pepper 
for the sauce: 
- 1 onion 
- 1 carrot 
- 2 bell peppers 
- 2 tbsp. tomato paste or sauce or ketchup
- 2 tbsp. oil 
- 1 tsp. sugar 
- pinch of oregano

How to:

1. Boil 3 cups of water, add the buckwheat, cook on a low fire for 20 minutes until all the water has evaporated.

2. Chop the onion, heat oil in a frying pan and saute the onion for 7 minutes.

3. For the sauce: in a skillet heat oil. Chop the onion, chop the carrot and peppers in stripes. Saute the onion about 5 minutes, add the carrot and peppers and saute for another 5 minutes. Dissolve the tomato paste in a cup of water and pour to the skillet. Add
sugar, salt, oregano. Heat the sauce through and set aside for a while.

4. Blend the ground meat and cooked buckwheat (cooled), add the egg, mayo, sauted onion, salt and black pepper. Mix
everythin thoroughly.

5. Form small burgers and fry them on both sides 6 minutes.

6. Put the burgers into a baking form or a heavy pan, pour over the tomato sauce and bake at 360 degrees 15-20 minutes.

Cake with dulce de leche



















This is definitely going to be something very hard to get over. An extremely delicious cake for any occasion.

Ingredients:

for the dough:
— 7 oz butter, softened
— 7 oz cream or yoghurt
— 2 cups sugar
— 2 eggs
— about 3 cups flour
— 1 tsp. baking soda

for the frosting:

— 2 cans of dulce de leche
— 3.5 oz butter
— 3.5 oz roasted and chopped nuts
— some dark chocolate (approx. 1 oz)

How to:

1. Whip the eggs and sugar until it dissolves completely. Stir in the cream or yoghurt and butter and whip once more. Add the flour, baking soda and mix to a dough. Put
it for 30 minutes into the fridge.

2. Take the dough out, divide into 3 parts and roll out each part into a rectangle. You don’t have to be strictly precise, as we will have to “trim” the edges and use the crumbs for decoration.

3. Put the 3 layers on a baking sheet and pierce with a fork here and there. Bake at 390 degrees for 20 minutes.
Let them cool a bit, then place one layer on top of the other and trim a little the edges to make them straight.
4. Roast the cut off pieces in the oven for 10 minutes and then crush them to get crumbs.

Now we’ll have to make the frosting. Melt the chocolate in the microwave. Combine dulce de leche with the butter and melted chocolate and stir everything thoroughly.
Crush the roasted nuts and stir into the frosting. Smear the frosting on each cake layer and also the edges. Sprinkle the top layer with the roasted crumbs and grated chocolate.
Let
the cake stand for 2-3 hours.

Potato pancakes with mushrooms



















Potato pancakes or Draniki is an extremely popular dish in Russia. The basic recipe contains just potatoes and flour. This is a version with mushrooms which give the dish a yet yummier flavor.

Ingredients:

- 2.2 lbs potatoes
- 10.5 oz button mushrooms
- 1 onion
- 1 egg
- 2 tbsp. flour
- salt and pepper to taste
- some oil for frying

How to:

1. Chop the onion and saute it in oil for a couple of minutes. Add
chopped mushrooms and saute for another 15 minutes.
2.
Peel the potatoes and coarsly (medium) grate them.  Mix in the mushrooms, egg, salt and pepper.
3. Heat oil in a frying pan and scoop the batter into the frying pan with a spoon to make individual pancakes. Fry on each side until golden brown. If you want, serve them with sour cream.
