Luncheon meat and mushroom cake


Ingredients:

For batter #1:
- 11 oz ground chicken meat
- 2 eggs
- 1 cup milk
- 1 bundle scallion, chopped
- salt and pepper
- flour by eye – you should get a batter of a pancake batter texture
- 2 tbsp. melted butter

Instructions: Mix all the ingredients and bake 3 large pancakes (crepes) of approx. 10.2 inch across diameter.

For batter #2:
- 1 zucchini, Finely grated and squeezed
- 1 bundle scallion, finely chopped
- 2 eggs
- 1 cup milk
- salt and pepper to taste
- 2 tbsp. oil
- flour by eye the same as in dough # 1, you should get a batter of a pancake batter texture

Instructions: Mix all the ingredients and bake 3 10.2 inch crepes (pancakes).

For the filling:
- 1 lbs. mushrooms
- 2 onions
- salt and pepper
Instructions: Saute mushrooms with onions.

For decoration:
- 3.7 oz grated cheese
- mayo or cream

How to:

Work in layers:
- zucchini pancake
- mushrooms
- grated cheese
- meat pancake
- mushrooms
- grated cheese
- zucchini pancake...etc.

Smear the top meat pancake with mayo, put grated cheese and bake 10-15 minutes in the oven at 365 degrees until golden brown. Serve warm. Very delicious.
