Fried big perogies with potato and cheese filling - Chebureki


This is a very easy and delicious dish borrowed by Russians from the oriental peoples. It's made with different kinds of filling. 

Ingredients:

For the filling:
- 2.2 lbs potatoes
- 3.7-4 oz of any cheese
- 1 bundle of dill
- salt and pepper

For the dough:

- 1 egg
- a bit less than 1/2 cup sour milk (or buttermilk)+ 1 tbsp. cream or yoghurt
- 1.8 oz melted butter
- 0,5 tsp. salt
- black pepper
- 3 cups flour

How to:

1. Peel, boil and mash the potatoes. Add salt.
2. Grate the cheese and mix with the HOT mashed potatoes.
3. Add pepper, finely chopped dill and stir well.
4. Combine all the ingredients for the dough.
5. Nip off a handful of dough and roll out to a 8 inch circle slightly thinner than 1/8 inch. Place approx. 3 tbsp. of the filling in the middle, fold the circle in half and pinch the edges (you will get something like a big flat perogie). 


Do the same thing with the rest of the dough.
6. Heat oil in a frying pan and fry the perogies for a few minutes on each side until golden brown.
